Folate addition to flour

Since September 2009, folate has to be added to flour by Flour Millers. Bakers will notice no difference in performance but should be aware that they will have to declare folate as an ingredient in bread from this date forward.

Iodised Salt

Also from September 2009, legislation requires that bakers have to use Iodised salt for bread production and include iodised salt as an ingredient on packaging.

The deadlines for mandatory fortification are:

  • Folate in Bread - September 13, 2009

  • Iodised Salt in Bread - October 9, 2009

Packaging requirements for bakers

If bakers wholesale or pack their product they are required to add the Iodised Salt and Folate to packaging. Instead of Salt it should read Iodised Salt. The Vitamin (Thiamin) declaration should change to Vitamin (Thiamin, Folate).
